This Israel-based farm cultures only osetra (acipenser gueldenstaedtii) imported from Russia.
The consistency from fish to fish is impressive, as is the light flavor. Perhaps milder than most wild Osetra, the Israeli Osetra probably tastes more like one would find eating Osetra on the banks of the Caspian Sea than Caspian Osetra tastes months later when it reaches market.
This is a very interesting caviar and arguably the world's best sustainable osetra.
